This is a delicious and hearty keto friendly recipe for Tex Mex Pulled Chicken Soup. It's packed with flavor and will keep you satisfied for hours.
Ingredients[edit | edit source]
- 2 lbs chicken breasts
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced (for garnish)
- 1/4 cup shredded cheddar cheese (for garnish)
Instructions[edit | edit source]
- Place the chicken breasts in a slow cooker.
- Add the onion, garlic, bell pepper, diced tomatoes with green chilies, chicken broth, cumin, chili powder, paprika, black pepper, and salt.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once the chicken is cooked, remove it from the slow cooker and shred it with two forks.
- Return the shredded chicken to the slow cooker and stir in the chopped cilantro.
- Serve the soup hot, garnished with sliced avocado and shredded cheddar cheese.
