Keto Friendly 4th of July Summer Berry Trifle[edit | edit source]
This is a delicious and festive dessert perfect for a 4th of July celebration. It's low in carbs, making it a great choice for those following a keto diet.
Ingredients[edit | edit source]
- 1 cup of almond flour
- 1/4 cup of erythritol
- 1 teaspoon of baking powder
- 1/2 cup of butter, melted
- 4 eggs
- 1 teaspoon of vanilla extract
- 2 cups of heavy cream
- 1 cup of strawberries, sliced
- 1 cup of blueberries
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the almond flour, erythritol, and baking powder.
- Add the melted butter, eggs, and vanilla extract to the dry ingredients and mix well.
- Pour the batter into a greased baking dish and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is cooling, whip the heavy cream until it forms soft peaks.
- Once the cake is cool, cut it into cubes.
- In a trifle dish, layer the cake cubes, whipped cream, and berries.
- Repeat the layers until all ingredients are used, finishing with a layer of whipped cream and berries on top.
- Chill in the refrigerator for at least 2 hours before serving.
