Ultimate Breakfast Roll-Ups are a delicious and nutritious way to start your day. They are packed with protein and healthy fats, making them a perfect choice for those following a keto diet.
Ingredients[edit | edit source]
- 4 large eggs
- 1/4 cup of milk
- Salt and pepper to taste
- 1 tablespoon of olive oil
- 1/2 cup of shredded cheddar cheese
- 4 slices of bacon
- 1/2 cup of diced bell peppers
- 1/4 cup of diced onions
Instructions[edit | edit source]
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the egg mixture to the skillet and cook until set, stirring occasionally.
- Sprinkle the shredded cheese over the cooked eggs and let it melt.
- In a separate skillet, cook the bacon until crispy.
- Remove the bacon from the skillet and set it aside.
- In the same skillet, add the bell peppers and onions and cook until softened.
- Lay out the cooked bacon on a cutting board and top with the egg and cheese mixture.
- Add the cooked vegetables on top of the eggs and cheese.
- Roll up the bacon, egg, and cheese mixture and secure with a toothpick.
- Serve the Ultimate Breakfast Roll-Ups warm.
