Vegetarian Greek Collard Wraps are a delicious and nutritious keto-friendly meal. They are packed with fresh vegetables and a tangy Greek-inspired filling, all wrapped up in a hearty collard green leaf.
Ingredients[edit | edit source]
- 8 large collard green leaves
- 1 cup feta cheese, crumbled
- 1 cup kalamata olives, pitted and chopped
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions[edit | edit source]
- Wash the collard green leaves thoroughly and pat dry.
- In a large bowl, combine the feta cheese, kalamata olives, cucumber, tomato, red onion, parsley, olive oil, and lemon juice. Stir until well combined. Season with salt and pepper to taste.
- Lay a collard green leaf flat and place a generous scoop of the Greek filling in the center. Fold in the sides and roll up the leaf to create a wrap. Repeat with the remaining leaves and filling.
- Serve the Vegetarian Greek Collard Wraps immediately, or refrigerate for up to 2 days.
