Vegetarian Loaded Zucchini Skins[edit | edit source]
A delicious and healthy keto friendly recipe, Vegetarian Loaded Zucchini Skins are perfect for those following a low-carb diet.
Ingredients[edit | edit source]
- 4 medium zucchini
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1/2 cup chopped black olives
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the zucchinis in half lengthwise and scoop out the pulp, leaving a shell about 1/4 inch thick.
- Brush the zucchini shells with olive oil and season with salt and pepper.
- Place the zucchini shells on a baking sheet and bake for about 15 minutes, or until they are tender.
- While the zucchini is baking, sauté the onions and bell peppers in a pan until they are soft.
- Remove the zucchini from the oven and fill each shell with the sautéed onions and peppers, chopped tomatoes, and black olives.
- Top each zucchini half with shredded cheddar cheese.
- Return the zucchini to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Serve the Vegetarian Loaded Zucchini Skins warm, topped with sour cream.
