Vegetarian Low Carb Quiche is a delicious and healthy meal that is perfect for those following a keto diet. It is packed with nutritious vegetables and high-quality proteins, making it a great choice for a filling breakfast, lunch, or dinner.
Ingredients[edit | edit source]
- 1 Almond Flour crust
- 1 cup of spinach
- 1/2 cup of mushrooms
- 1/2 cup of bell peppers
- 1/2 cup of onions
- 1 cup of cheddar cheese
- 6 eggs
- 1/2 cup of heavy cream
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- Prepare the Almond Flour crust according to the package instructions and set aside.
- In a large skillet, sauté the spinach, mushrooms, bell peppers, and onions until they are tender.
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Spread the sautéed vegetables evenly over the crust, then pour the egg mixture over the top.
- Sprinkle the cheddar cheese evenly over the top of the quiche.
- Bake for 30-35 minutes, or until the quiche is set and the cheese is golden brown.
- Allow the quiche to cool for a few minutes before slicing and serving.
