  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
  3. Add the riced cauliflower, cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for another 5 minutes.
  4. Scoop out some of the flesh in the avocados to make a bowl. Place the avocados in a baking dish.
  5. Fill each avocado with the cauliflower mixture. Top with shredded cheddar cheese.
  6. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish with cilantro before serving.
