Vegetarian Taco Stuffed Avocados is a delicious and healthy keto friendly recipe. It is a perfect meal for those who are following a ketogenic diet and for vegetarians who want to enjoy a tasty and satisfying dish.
Ingredients[edit | edit source]
- 4 avocados, halved and pitted
- 1 cup cauliflower, riced
- 1 cup bell pepper, diced
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- Cilantro for garnish
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the riced cauliflower, cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for another 5 minutes.
- Scoop out some of the flesh in the avocados to make a bowl. Place the avocados in a baking dish.
- Fill each avocado with the cauliflower mixture. Top with shredded cheddar cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with cilantro before serving.
