Bacon and Eggs Benedict Salad[edit | edit source]

A delicious and healthy twist on a classic breakfast dish, the Bacon and Eggs Benedict Salad is a perfect meal for those following a keto diet.

Ingredients[edit | edit source]

  • 4 large eggs
  • 8 slices of bacon
  • 2 cups of fresh spinach
  • 1 avocado, sliced
  • 1 tablespoon of vinegar
  • Salt and pepper to taste
  • For the Hollandaise Sauce:
    • 3 egg yolks
    • 1/2 cup of melted butter
    • 1 tablespoon of lemon juice
    • Salt and cayenne pepper to taste

Instructions[edit | edit source]

  1. Start by cooking the bacon in a pan until crispy. Once done, set aside on a paper towel to drain the excess fat.
  2. In the same pan, fry the eggs to your liking.
  3. To make the hollandaise sauce, whisk the egg yolks, lemon juice, salt, and cayenne pepper in a heatproof bowl until smooth. Set the bowl over a saucepan of simmering water (don't let the bowl touch the water) and continue to whisk rapidly. Slowly drizzle in the melted butter and continue to whisk until the sauce is thick and creamy.
  4. Assemble the salad by placing the spinach at the bottom of a plate, top with the crispy bacon, fried eggs, and sliced avocado. Drizzle the hollandaise sauce over the top and season with salt and pepper.
