Bacon Avocado Muffins are a delightful savory treat, perfect for breakfast or as a snack. With the creaminess of avocado and the crispness of bacon, these muffins are a delicious twist on the traditional.
Ingredients[edit | edit source]
- 2 ripe avocados, peeled and mashed
- 6 strips of bacon, cooked and crumbled
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup melted butter
- 1 cup milk
- 2 large eggs
- 1/4 cup finely chopped green onion
- 1 cup shredded cheddar cheese
Instructions[edit | edit source]
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease with butter.
- In a large bowl, combine the flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the melted butter, milk, and eggs. Stir in the mashed avocados until well combined.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in the crumbled bacon, green onion, and cheddar cheese.
- Fill the muffin cups 3/4 full with the batter.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool for 5 minutes in the muffin tin before transferring to a cooling rack.
