  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Cut the tops off the mini bell peppers and remove the seeds.

  4. Stuff each mini bell pepper with the cheese mixture.
  5. Arrange the stuffed peppers on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  6. Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and the cheese is melted and slightly golden.
