Baked Mini Bell Peppers is a delicious and healthy keto friendly recipe. It's easy to prepare and packed with nutrients.
Ingredients[edit | edit source]
- 12 mini bell peppers
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup cheddar cheese, shredded
- 1/4 cup cream cheese
- 1/4 cup green onions, chopped
- 1/4 teaspoon garlic powder
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the tops off the mini bell peppers and remove the seeds.
- In a bowl, mix together the cream cheese, cheddar cheese, green onions, and garlic powder.
- Stuff each mini bell pepper with the cheese mixture.
- Arrange the stuffed peppers on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and the cheese is melted and slightly golden.
