This is a delicious and nutritious keto friendly recipe for Berry Coconut Oatmeal. It's a great way to start your day with a healthy and satisfying meal.
Ingredients[edit | edit source]
- 1/2 cup of coconut flour
- 1 cup of almond milk
- 1/2 cup of mixed berries
- 1 tablespoon of chia seeds
- 1 tablespoon of coconut oil
- 1 tablespoon of erythritol or other keto-friendly sweetener
- A pinch of salt
Instructions[edit | edit source]
- In a medium-sized saucepan, heat the almond milk over medium heat until it begins to simmer.
- Add the coconut flour, chia seeds, and salt to the saucepan and stir until well combined.
- Reduce the heat to low and let the mixture simmer for about 10 minutes, or until it thickens to your desired consistency.
- While the oatmeal is cooking, heat the coconut oil in a small skillet over medium heat.
- Add the berries to the skillet and cook for about 5 minutes, or until they are soft and have released their juices.
- Stir in the erythritol or other sweetener into the skillet and cook for another 2 minutes.
- Once the oatmeal is done, divide it into bowls and top with the berry mixture.
