This is a delicious and nutritious keto friendly recipe for Berry Coconut Oatmeal. It's a great way to start your day with a healthy and satisfying meal.

  1. In a medium-sized saucepan, heat the almond milk over medium heat until it begins to simmer.
  2. Add the coconut flour, chia seeds, and salt to the saucepan and stir until well combined.
  3. Reduce the heat to low and let the mixture simmer for about 10 minutes, or until it thickens to your desired consistency.
  4. While the oatmeal is cooking, heat the coconut oil in a small skillet over medium heat.
  5. Add the berries to the skillet and cook for about 5 minutes, or until they are soft and have released their juices.
  6. Stir in the erythritol or other sweetener into the skillet and cook for another 2 minutes.
  7. Once the oatmeal is done, divide it into bowls and top with the berry mixture.
