  1. In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to soften.
  2. In a saucepan, combine the heavy cream, erythritol, and cocoa powder. Heat over medium heat until the erythritol is dissolved.
  3. Remove the saucepan from the heat and stir in the vanilla extract and the softened gelatin. Stir until the gelatin is completely dissolved.
  4. Pour the mixture into four dessert dishes and refrigerate for at least 2 hours, or until set.
  5. Before serving, top each panna cotta with fresh blackberries.
