Blue Cheese and Bacon Salad[edit | edit source]
A delicious and easy to prepare keto friendly recipe, the Blue Cheese and Bacon Salad is a perfect combination of creamy, salty and crunchy. It's a great option for a quick lunch or a light dinner.
Ingredients[edit | edit source]
- 4 cups of Romaine lettuce
- 1/2 cup of crumbled Blue cheese
- 4 slices of cooked and crumbled Bacon
- 1/2 cup of diced Cucumbers
- 1/4 cup of diced Red onions
- 1/2 cup of Cherry tomatoes
- 2 tablespoons of Olive oil
- 1 tablespoon of Apple cider vinegar
- Salt and Black pepper to taste
Instructions[edit | edit source]
- Wash and chop the Romaine lettuce, cucumbers, red onions and cherry tomatoes.
- Cook the bacon until crispy, then crumble it into small pieces.
- In a large bowl, combine the lettuce, cucumbers, onions, tomatoes, crumbled bacon and blue cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt and black pepper to make the dressing.
- Drizzle the dressing over the salad and toss to combine.
- Serve immediately and enjoy!
