Cheesy cauliflower casserole is a delicious and nutritious keto friendly dish. It's a perfect side dish or main course for those following a low-carb or keto diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 1 cup of heavy cream
- 2 cups of shredded cheddar cheese
- 1/2 cup of Parmesan cheese, grated
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 1/4 cup of chopped parsley for garnish
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Steam the cauliflower florets until they are tender, about 5-7 minutes.
- In a saucepan, heat the heavy cream over medium heat. Add the cheddar cheese, Parmesan cheese, garlic powder, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
- Place the steamed cauliflower in a baking dish. Pour the cheese sauce over the cauliflower.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
- Garnish with chopped parsley before serving.
