A delicious and nutritious keto friendly salad that is perfect for any meal. This Cranberry Kale Salad is packed with vitamins and minerals, and is sure to keep you satisfied.
Ingredients[edit | edit source]
- 1 bunch of fresh kale, de-stemmed and chopped
- 1 cup of fresh cranberries
- 1/2 cup of almonds, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- Salt and pepper to taste
Instructions[edit | edit source]
- In a large bowl, combine the chopped kale, cranberries, chopped almonds, and crumbled feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld together.
