Creamy Spinach Pork Tenderloin Roulade is a delicious and nutritious keto-friendly dish. It combines the rich flavors of pork tenderloin, spinach, and cream cheese to create a satisfying meal that fits within the guidelines of a ketogenic diet.
Ingredients[edit | edit source]
- 1 pork tenderloin
- 2 cups of fresh spinach
- 1 cup of cream cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- Butterfly the pork tenderloin and season it with salt and pepper.
- In a pan, sauté the spinach and garlic in olive oil until the spinach is wilted.
- Spread the cream cheese on the inside of the pork tenderloin, then layer the sautéed spinach and garlic on top.
- Roll the pork tenderloin up tightly and secure it with kitchen twine.
- Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through.
- Let the roulade rest for a few minutes before slicing and serving.
