Creamy Spinach Pork Tenderloin Roulade is a delicious and nutritious keto-friendly dish. It combines the rich flavors of pork tenderloin, spinach, and cream cheese to create a satisfying meal that fits within the guidelines of a ketogenic diet.

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Butterfly the pork tenderloin and season it with salt and pepper.
  3. In a pan, sauté the spinach and garlic in olive oil until the spinach is wilted.
  4. Spread the cream cheese on the inside of the pork tenderloin, then layer the sautéed spinach and garlic on top.
  5. Roll the pork tenderloin up tightly and secure it with kitchen twine.
  6. Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through.
  7. Let the roulade rest for a few minutes before slicing and serving.
