Dairy Free Keto Crepes are a delicious and healthy alternative to traditional crepes. They are perfect for those following a keto diet and are also dairy free, making them suitable for those with dietary restrictions.
Ingredients[edit | edit source]
- 4 eggs
- 1/2 cup almond milk
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1 tablespoon erythritol or other keto-friendly sweetener
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Coconut oil for frying
Instructions[edit | edit source]
- In a large bowl, whisk together the eggs, almond milk, erythritol, and vanilla extract.
- In a separate bowl, mix together the coconut flour, almond flour, and salt.
- Gradually add the dry ingredients to the wet ingredients, whisking continuously to avoid lumps.
- Heat a non-stick pan over medium heat and lightly grease with coconut oil.
- Pour 1/4 cup of the batter into the pan and swirl to evenly distribute.
- Cook for 2-3 minutes, or until the edges start to lift. Flip and cook for another 1-2 minutes.
- Repeat with the remaining batter.
- Serve warm with your favorite keto-friendly toppings.
