Enchilada Skillet Chicken is a delicious, keto-friendly dish that is easy to prepare and packed with flavor. This recipe serves four and takes approximately 30 minutes to prepare and cook.

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for 5-7 minutes on each side, or until it's no longer pink in the middle.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the onion, green bell pepper, and red bell pepper. Cook until they're softened.
  6. Add the red enchilada sauce to the skillet and stir to combine.
  7. Return the chicken to the skillet, spooning some of the sauce over the top.
  8. Sprinkle the cheddar cheese and black olives over the top of the chicken.
  9. Cover the skillet and let it simmer for 5-10 minutes, or until the cheese is melted.
  10. Garnish with cilantro before serving.
