Enchilada Skillet Chicken is a delicious, keto-friendly dish that is easy to prepare and packed with flavor. This recipe serves four and takes approximately 30 minutes to prepare and cook.
Ingredients[edit | edit source]
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 cup red enchilada sauce
- 1/2 cup black olives, sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup onion, diced
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
- Cilantro for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for 5-7 minutes on each side, or until it's no longer pink in the middle.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the onion, green bell pepper, and red bell pepper. Cook until they're softened.
- Add the red enchilada sauce to the skillet and stir to combine.
- Return the chicken to the skillet, spooning some of the sauce over the top.
- Sprinkle the cheddar cheese and black olives over the top of the chicken.
- Cover the skillet and let it simmer for 5-10 minutes, or until the cheese is melted.
- Garnish with cilantro before serving.
