  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, mix together the almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast into the egg mixture, then into the almond flour mixture, making sure to coat both sides.
  5. Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken and cook for 3-4 minutes on each side, until golden brown.
  6. Pour the marinara sauce over the chicken in the skillet. Sprinkle the mozzarella cheese on top.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
