Greek Cauliflower Salad is a delicious and healthy keto friendly dish. It is easy to prepare and packed with nutrients.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/2 cup tomatoes, diced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets in 1/4 cup of the olive oil and season with salt and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until golden brown and tender.
- While the cauliflower is roasting, prepare the dressing by whisking together the remaining olive oil, red wine vinegar, salt, and pepper.
- In a large bowl, combine the roasted cauliflower, feta cheese, Kalamata olives, red onion, cucumber, tomatoes, and fresh parsley. Pour the dressing over the salad and toss to combine.
- Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
