Halloumi Cheese Butter Fried Eggplant is a delicious keto-friendly dish that combines the rich flavors of halloumi cheese, butter, and eggplant. This recipe is perfect for those following a ketogenic diet.
Ingredients[edit | edit source]
- 1 large eggplant
- 200g halloumi cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Slice the eggplant into 1/2 inch thick rounds.
- Heat the butter in a large skillet over medium heat.
- Add the eggplant slices to the skillet and cook until golden brown on both sides, about 5 minutes per side.
- While the eggplant is cooking, slice the halloumi cheese into thin slices.
- Once the eggplant is cooked, remove it from the skillet and set it aside.
- In the same skillet, add the halloumi cheese slices and cook until golden brown on both sides, about 2 minutes per side.
- Place the cooked eggplant slices on a serving plate, top with the fried halloumi cheese, and garnish with fresh parsley.
- Season with salt and pepper to taste and serve immediately.
