Halloumi Cheese Butter Fried Eggplant is a delicious keto-friendly dish that combines the rich flavors of halloumi cheese, butter, and eggplant. This recipe is perfect for those following a ketogenic diet.

  1. Slice the eggplant into 1/2 inch thick rounds.
  2. Heat the butter in a large skillet over medium heat.
  3. Add the eggplant slices to the skillet and cook until golden brown on both sides, about 5 minutes per side.
  4. While the eggplant is cooking, slice the halloumi cheese into thin slices.
  5. Once the eggplant is cooked, remove it from the skillet and set it aside.
  6. In the same skillet, add the halloumi cheese slices and cook until golden brown on both sides, about 2 minutes per side.
  7. Place the cooked eggplant slices on a serving plate, top with the fried halloumi cheese, and garnish with fresh parsley.
  8. Season with salt and pepper to taste and serve immediately.
