  1. Turn on your Instant Pot and select the sauté function. Add the olive oil.
  2. Season the pork loin with salt, pepper, and Italian seasoning.
  3. Once the oil is hot, add the pork loin to the pot and brown on all sides. This should take about 5 minutes.
  4. Remove the pork loin from the pot and set aside.
  5. Add the garlic to the pot and sauté until fragrant.
  6. Pour in the chicken broth and use a wooden spoon to scrape the bottom of the pot to remove any browned bits.
  7. Return the pork loin to the pot and sprinkle the Parmesan cheese on top.
  8. Close the lid and set the Instant Pot to the pressure cook or manual setting. Cook on high pressure for 20 minutes.
  9. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  10. Remove the pork loin from the pot and let it rest for a few minutes before slicing. Serve warm.
