A delicious and hearty keto friendly recipe, Instant Pot White Chicken Chili is a perfect meal for those on a low-carb diet. This recipe is easy to prepare and packed with flavors.

  1. Turn on the Instant Pot and select the sauté mode. Add the chicken, onion, garlic, bell pepper, and green chilies. Cook until the chicken is browned and the vegetables are softened.
  2. Add the cumin, oregano, cayenne pepper, salt, and pepper. Stir to combine.
  3. Pour in the chicken broth. Secure the lid and set the Instant Pot to high pressure for 15 minutes.
  4. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  5. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  6. Stir in the heavy cream and cheddar cheese until the cheese is melted and the chili is creamy.
  7. Serve hot with your favorite keto-friendly toppings.
