Keto Granola Cereal is a delicious and nutritious breakfast option for those following a Keto diet. It's packed with healthy fats and protein to keep you satisfied throughout the morning.

  1. Preheat your oven to 300°F (150°C).
  2. In a food processor, pulse the almonds, pecans, and walnuts until they are coarsely chopped.
  3. In a large bowl, combine the chopped nuts, flaxseeds, pumpkin seeds, shredded coconut, erythritol, cinnamon, and salt.
  4. Melt the coconut oil and vanilla extract together, then pour over the nut and seed mixture. Stir until everything is well coated.
  5. Spread the mixture out on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  7. Let the granola cool completely. It will become crunchy as it cools.
