Keto Onigiri is a low-carb version of the traditional Japanese rice ball snack. Instead of using regular rice, this version uses cauliflower rice to keep the carb count low.
Ingredients[edit | edit source]
- 2 cups cauliflower rice, cooked
- 1 tsp sesame oil
- 1/4 tsp salt
- Nori sheets (seaweed)
- Fillings of choice (examples include keto-friendly tuna salad, cooked salmon, pickled vegetables)
Preparation[edit | edit source]
- 1. In a bowl, mix the cooked cauliflower rice with sesame oil and salt until well combined.
- 2. Lay out a nori sheet on a clean surface. Place a few spoonfuls of the cauliflower rice mixture in the center.
- 3. Add your chosen filling on top of the cauliflower rice.
- 4. Fold the nori sheet around the cauliflower rice and filling, pressing firmly to form a triangular shape. If desired, you can use a mold to help shape the onigiri.
- 5. Repeat with remaining ingredients. Serve immediately or store in a cool place for later consumption.
Serving Suggestions[edit | edit source]
- Enjoy with some keto-friendly soy sauce or keto salsa for dipping.
- Pair with a warm bowl of miso soup or a side of pickled vegetables.
