  1. In a bowl, whisk the eggs until well beaten. Set aside.
  2. Heat a non-stick pan over medium heat. Add the butter and let it melt.
  3. Add the onion and bell pepper to the pan and sauté until they are soft.
  4. Add the thinly sliced beef to the pan and cook until it is no longer pink.
  5. Pour the beaten eggs over the beef and vegetables. Sprinkle the shredded cheese on top.
  6. Cover the pan and let the omelet cook until the eggs are set and the cheese is melted.
  7. Season with salt and pepper to taste. Fold the omelet in half and serve.
