Keto Pumpkin Snickerdoodle Cookies are a delicious and healthy treat for those following a keto diet. They are low in carbs, high in fat, and packed with flavor.
Ingredients[edit | edit source]
- 1 cup Almond Flour
- 1/2 cup Coconut Flour
- 1/2 cup Erythritol
- 1/2 cup Pumpkin Puree
- 1/2 cup Butter, melted
- 1 Egg
- 1 tsp Vanilla Extract
- 1 tsp Pumpkin Spice
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 2 tbsp Cinnamon
- 2 tbsp Erythritol (for coating)
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking soda, pumpkin spice, and salt.
- In a separate bowl, mix together the melted butter, pumpkin puree, egg, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- In a small bowl, combine the cinnamon and erythritol for the coating.
- Roll the dough into 1-inch balls, then roll each ball in the cinnamon-erythritol mixture.
- Place the balls on the prepared baking sheet and flatten slightly with the bottom of a glass.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
