Keto-Friendly Mardi Gras Jambalaya[edit | edit source]

Jambalaya is a classic Louisiana dish, and this version is perfect for those following a keto diet. It's packed with flavor and will bring a taste of Mardi Gras to your table.

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken and sausage and cook until browned.
  3. Remove the meat from the pot and set aside.
  4. In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are soft.
  5. Add the diced tomatoes, salt, black pepper, paprika, cayenne pepper, oregano, and thyme. Stir to combine.
  6. Return the meat to the pot and add the chicken broth. Bring to a simmer.
  7. Cover the pot and let it simmer for about 20 minutes.
  8. Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
  9. Serve the jambalaya hot.
