Keto recipes for mardi gras
Keto-Friendly Mardi Gras Jambalaya[edit | edit source]
Jambalaya is a classic Louisiana dish, and this version is perfect for those following a keto diet. It's packed with flavor and will bring a taste of Mardi Gras to your table.
Ingredients[edit | edit source]
- 2 tablespoons olive oil
- 1 pound chicken breast, cut into bite-sized pieces
- 1 pound andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2 cups chicken broth
- 1 pound shrimp, peeled and deveined
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat.
- Add the chicken and sausage and cook until browned.
- Remove the meat from the pot and set aside.
- In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are soft.
- Add the diced tomatoes, salt, black pepper, paprika, cayenne pepper, oregano, and thyme. Stir to combine.
- Return the meat to the pot and add the chicken broth. Bring to a simmer.
- Cover the pot and let it simmer for about 20 minutes.
- Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
- Serve the jambalaya hot.
