Keto Ribeye Steak with Loaded Cauliflower Mash Bake[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the ribeye steaks with salt and pepper.
  3. Heat the olive oil in a pan over medium-high heat. Add the steaks and cook for 4-5 minutes on each side, or until desired doneness. Remove from the pan and let rest.
  4. While the steaks are resting, cut the cauliflower into florets and steam until tender.
  5. In a large bowl, mash the cauliflower with the heavy cream, butter, and minced garlic until smooth. Season with salt and pepper.
  6. Stir in half of the cheddar cheese and half of the chopped bacon.
  7. Transfer the cauliflower mash to a baking dish and top with the remaining cheese and bacon.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chives before serving alongside the ribeye steaks.
