Keto Ribeye Steak with Loaded Cauliflower Mash Bake[edit | edit source]
Ingredients[edit | edit source]
- 2 ribeye steaks
- 1 head of cauliflower
- 1 cup of cheddar cheese
- 1/2 cup of heavy cream
- 2 garlic cloves
- 4 slices of bacon
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 1/4 cup of chives
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Season the ribeye steaks with salt and pepper.
- Heat the olive oil in a pan over medium-high heat. Add the steaks and cook for 4-5 minutes on each side, or until desired doneness. Remove from the pan and let rest.
- While the steaks are resting, cut the cauliflower into florets and steam until tender.
- In a large bowl, mash the cauliflower with the heavy cream, butter, and minced garlic until smooth. Season with salt and pepper.
- Stir in half of the cheddar cheese and half of the chopped bacon.
- Transfer the cauliflower mash to a baking dish and top with the remaining cheese and bacon.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with chives before serving alongside the ribeye steaks.
