This is a delicious and healthy recipe for a Keto Stuffed Tamal Casserole. It's perfect for those following a keto diet and is packed with flavor.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 1 cup of chicken broth
- 1 cup of shredded chicken
- 1 cup of shredded cheese
- 1/2 cup of butter
- 1/4 cup of coconut flour
- 1 egg
- 1 garlic clove, minced
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of cumin
- 1/2 teaspoon of chili powder
Instructions[edit | edit source]
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the almond flour, coconut flour, baking powder, salt, pepper, cumin, and chili powder.
- In a separate bowl, beat the egg and then add the chicken broth and melted butter. Mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing well until a dough forms.
- Spread half of the dough into the bottom of a greased casserole dish.
- Layer the shredded chicken and cheese on top of the dough.
- Spread the remaining dough over the chicken and cheese.
- Bake for 30-35 minutes, or until the top is golden brown and the casserole is heated through.
