Keto Vanilla Bean Cupcakes are a delicious, low-carb dessert option that are perfect for those following a Ketogenic diet. They are made with almond flour and sweetened with a natural sweetener, making them a guilt-free treat.
Ingredients[edit | edit source]
- 2 cups Almond flour
- 1/2 cup Erythritol or other natural sweetener
- 1/2 cup Unsalted butter, melted
- 4 large Eggs
- 1/2 cup Almond milk
- 1 Vanilla bean, scraped
- 2 tsp Baking powder
- 1/4 tsp Salt
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the almond flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, eggs, almond milk, and scraped vanilla bean.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Divide the batter evenly among the cupcake liners.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
