Low carb boeuf bourguignon cauliflower mash
Low Carb Boeuf Bourguignon with Cauliflower Mash[edit | edit source]
Ingredients[edit | edit source]
- Beef (1 kg)
- Bacon (200 g)
- Carrots (2, chopped)
- Onions (2, chopped)
- Garlic cloves (4, minced)
- Red wine (2 cups)
- Beef broth (2 cups)
- Tomato paste (1 tablespoon)
- Thyme (1 teaspoon)
- Bay leaves (2)
- Salt and Pepper (to taste)
- Olive oil (2 tablespoons)
For the Cauliflower Mash:
- Cauliflower (1 head, cut into florets)
- Butter (2 tablespoons)
- Cream cheese (2 tablespoons)
- Salt and Pepper (to taste)
Instructions[edit | edit source]
- Heat the olive oil in a large pan over medium heat. Add the beef and cook until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the bacon and cook until crispy. Remove from the pan and set aside with the beef.
- Add the onions, carrots, and garlic to the pan and cook until softened.
- Return the beef and bacon to the pan. Add the red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2 hours.
- While the beef is cooking, prepare the cauliflower mash. Steam the cauliflower until tender, then drain and return to the pot.
- Add the butter, cream cheese, salt, and pepper to the cauliflower. Mash until smooth.
- Serve the boeuf bourguignon over the cauliflower mash.
