Low Carb Boeuf Bourguignon with Cauliflower Mash[edit | edit source]

For the Cauliflower Mash:

  1. Heat the olive oil in a large pan over medium heat. Add the beef and cook until browned on all sides. Remove from the pan and set aside.
  2. In the same pan, add the bacon and cook until crispy. Remove from the pan and set aside with the beef.
  3. Add the onions, carrots, and garlic to the pan and cook until softened.
  4. Return the beef and bacon to the pan. Add the red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. While the beef is cooking, prepare the cauliflower mash. Steam the cauliflower until tender, then drain and return to the pot.
  6. Add the butter, cream cheese, salt, and pepper to the cauliflower. Mash until smooth.
  7. Serve the boeuf bourguignon over the cauliflower mash.
