Low Carb Cauliflower Mushroom Risotto is a delicious and healthy keto friendly recipe. This dish is perfect for those who are on a ketogenic diet and love the creamy, savory taste of a traditional risotto but want to keep their carbohydrate intake low.
Ingredients[edit | edit source]
- 1 large cauliflower, riced
- 200g mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of Parmesan cheese, grated
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions[edit | edit source]
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic to the pan and sauté until the onion becomes translucent.
- Add the mushrooms to the pan and continue to sauté until they are browned and tender.
- Add the riced cauliflower to the pan and stir well to combine with the other ingredients.
- Pour in the chicken broth and bring the mixture to a simmer. Cook for about 10 minutes, or until the cauliflower is tender.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
- Serve the risotto hot, garnished with fresh parsley.
