Low carb coconut pancakes are a delicious and healthy breakfast option for those following a keto diet. They are easy to prepare and packed with nutrients.
Ingredients[edit | edit source]
- 1/2 cup of coconut flour
- 4 eggs
- 1 cup of coconut milk
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 2 tablespoons of coconut oil for frying
- Stevia or other low-carb sweetener to taste
Instructions[edit | edit source]
- In a large bowl, combine the coconut flour, baking powder, and salt.
- In another bowl, whisk together the eggs, coconut milk, and sweetener.
- Gradually add the dry ingredients to the wet ingredients, stirring until a batter forms.
- Heat the coconut oil in a frying pan over medium heat.
- Pour 1/4 cup of batter into the pan for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite low-carb syrup or toppings.
