Low carb coconut pancakes are a delicious and healthy breakfast option for those following a keto diet. They are easy to prepare and packed with nutrients.

  1. In a large bowl, combine the coconut flour, baking powder, and salt.
  2. In another bowl, whisk together the eggs, coconut milk, and sweetener.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until a batter forms.
  4. Heat the coconut oil in a frying pan over medium heat.
  5. Pour 1/4 cup of batter into the pan for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Repeat with the remaining batter.
  8. Serve warm with your favorite low-carb syrup or toppings.
