Low carb gumbalaya
Low Carb Gumbalaya[edit | edit source]
Low Carb Gumbalaya is a delicious, keto-friendly version of the traditional Cajun dish. It's packed with flavor and hearty ingredients, but with fewer carbs to fit into a keto diet.
Ingredients[edit | edit source]
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 pound andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2 cups cauliflower rice
- 2 cups chicken broth
- 1 pound shrimp, peeled and deveined
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the chicken and sausage and cook until browned.
- Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened.
- Stir in the diced tomatoes, salt, black pepper, paprika, cayenne pepper, oregano, and thyme. Cook for a few minutes until the spices are well incorporated.
- Add the cauliflower rice and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Add the shrimp to the pot and cook for another 5-7 minutes, until the shrimp is cooked through.
