Low carb irish colcannon
Low Carb Irish Colcannon[edit | edit source]
Low Carb Irish Colcannon is a traditional Irish dish that has been modified to fit a keto friendly diet. This dish is a hearty combination of mashed cauliflower instead of potatoes, mixed with kale or cabbage, and onions sautéed in butter. It's a perfect side dish for any meal and is especially popular on St. Patrick's Day.
Ingredients[edit | edit source]
- 1 large head of cauliflower, cut into florets
- 4 cups of chopped kale or cabbage
- 1 large onion, diced
- 4 cloves of garlic, minced
- 4 tablespoons of butter
- Salt and pepper to taste
- 1/2 cup of heavy cream
- 2 tablespoons of chopped fresh parsley
Instructions[edit | edit source]
- Steam the cauliflower florets until they are tender.
- While the cauliflower is steaming, melt the butter in a large pan over medium heat.
- Add the diced onion to the pan and sauté until it is translucent.
- Add the minced garlic to the pan and continue to sauté for another minute.
- Add the chopped kale or cabbage to the pan and cook until it is wilted.
- Once the cauliflower is tender, drain it and return it to the pot.
- Add the heavy cream to the pot and use a hand blender to puree the cauliflower until it is smooth.
- Mix the sautéed vegetables into the mashed cauliflower and season with salt and pepper.
- Garnish with fresh parsley before serving.
