Low Carb Moussaka is a delicious and healthy alternative to traditional moussaka. This recipe is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the eggplant slices on a baking sheet and bake for 15 minutes, or until lightly browned.
  3. While the eggplant is baking, cook the ground beef, onion, and garlic in a large skillet over medium heat until the beef is browned and the onion is tender.
  4. Add the diced tomatoes, red wine, cinnamon, allspice, salt, and pepper to the skillet. Simmer for 15 minutes.
  5. In a separate bowl, whisk together the heavy cream and eggs until well combined.
  6. Arrange half of the eggplant slices in the bottom of a baking dish. Top with half of the meat mixture, then repeat with the remaining eggplant and meat.
  7. Pour the cream and egg mixture over the top, then sprinkle with the grated cheese.
  8. Bake for 30 minutes, or until the top is golden and bubbly.
