Low Carb Osso Buco with Cauli Mash[edit | edit source]

Osso Buco is a traditional Italian dish that consists of braised veal shanks cooked with vegetables, white wine, and broth. This recipe modifies the classic dish to make it keto-friendly by replacing the traditional mashed potatoes with a low-carb cauliflower mash.

Instructions[edit | edit source]

  1. Season the veal shanks with salt and pepper.
  2. Heat the olive oil in a large pan over medium heat. Add the veal shanks and brown on all sides. Remove from the pan and set aside.
  3. In the same pan, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  4. Add the white wine to the pan and scrape the bottom to deglaze.
  5. Add the tomato sauce, beef broth, rosemary, and thyme. Bring to a simmer.
  6. Return the veal shanks to the pan, cover, and simmer for about 2 hours, or until the meat is tender.
  7. While the osso buco is cooking, prepare the cauli mash. Steam the cauliflower until tender, then drain.
  8. In a food processor, combine the steamed cauliflower, butter, heavy cream, salt, and pepper. Process until smooth.
  9. Serve the osso buco over the cauli mash.
