This is a delicious and refreshing keto friendly recipe for Low Carb Peppermint Mocha Ice Cream. It's perfect for those hot summer days or when you're just craving something sweet and refreshing.

  1. In a medium saucepan, combine the heavy cream, almond milk, erythritol, cocoa powder, and instant coffee. Heat over medium heat until the erythritol is fully dissolved.
  2. Remove the saucepan from the heat and stir in the peppermint extract.
  3. Allow the mixture to cool completely, then transfer it to an ice cream maker and churn according to the manufacturer's instructions.
  4. Once the ice cream is nearly finished churning, add the dark chocolate chips and allow them to mix in.
  5. Transfer the ice cream to a lidded container and freeze for at least 2 hours before serving.
