Mozzarella Stuffed Meatballs[edit | edit source]
Ingredients[edit | edit source]
- 1 lb Ground Beef
- 1/2 cup Parmesan (grated)
- 1/2 cup Pork Rind Crumbs
- 1 Egg
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 4 oz Mozzarella (cut into small cubes)
- 2 cups Low Carb Marinara Sauce
- Fresh Basil for garnish
Instructions[edit | edit source]
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground beef, Parmesan, pork rind crumbs, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.
- Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center and fold the meat around the cheese, forming a ball. Ensure the cheese is completely enclosed in the meat.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, or until the meatballs are browned and cooked through.
- While the meatballs are baking, heat the marinara sauce in a large skillet over medium heat.
- Once the meatballs are done, transfer them to the skillet with the marinara sauce. Simmer for 5-10 minutes, until the sauce is heated through.
- Garnish with fresh basil before serving.
