Roasted Celery and Macadamia Cheese is a delicious and nutritious keto friendly recipe. It is a perfect blend of crunchy celery, creamy macadamia cheese, and aromatic herbs. This dish is not only low in carbs but also high in healthy fats and fiber, making it an ideal choice for those following a ketogenic diet.

- 1 bunch of celery
- 1 cup of macadamia nuts
- 1/2 cup of water
- 1/4 cup of lemon juice
- 2 cloves of garlic
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of olive oil
- Fresh herbs for garnish
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Wash the celery and cut into 3-inch pieces.
- Place the celery on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the celery in the preheated oven for 20-25 minutes, or until golden brown and tender.
- While the celery is roasting, prepare the macadamia cheese. Soak the macadamia nuts in water for at least 2 hours, then drain.
- In a food processor, combine the soaked macadamia nuts, water, lemon juice, garlic, salt, and pepper. Process until smooth and creamy.
- Once the celery is done, remove from the oven and let it cool slightly.
- Serve the roasted celery with a generous dollop of macadamia cheese and garnish with fresh herbs.
