A hearty and flavorful dish, the Southwestern Pork Stew is a perfect keto friendly meal. This recipe is packed with protein and healthy fats, making it a great choice for those following a ketogenic diet.
Ingredients[edit | edit source]
- 2 lbs pork shoulder, cut into 1-inch cubes
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (4 oz) green chilies, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
- 2 tbsp olive oil
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.
- In the same pot, add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the diced tomatoes, green chilies, cumin, chili powder, salt, and black pepper to the pot. Stir to combine.
- Return the pork to the pot and add the chicken broth. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the pork is tender.
- Serve the stew hot, garnished with fresh cilantro if desired.
