Spicy Keto Chicken Casserole[edit | edit source]
Spicy Keto Chicken Casserole is a delicious and healthy dish that is perfect for those following a keto diet. It's packed with protein and healthy fats, and is low in carbs.
Ingredients[edit | edit source]
- 2 lbs of chicken breast, cubed
- 1 cup of cheddar cheese, shredded
- 1/2 cup of cream cheese
- 1/2 cup of heavy cream
- 1/2 cup of jalapenos, chopped
- 1/2 cup of red bell pepper, chopped
- 1/2 cup of green bell pepper, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- In a large pan, heat the olive oil over medium heat. Add the chicken and cook until it's no longer pink in the middle. Remove the chicken from the pan and set it aside.
- In the same pan, add the garlic, jalapenos, and bell peppers. Cook until they're soft.
- Add the cream cheese and heavy cream to the pan. Stir until the cream cheese is melted and the sauce is smooth.
- Return the chicken to the pan and stir to coat it in the sauce. Season with salt and pepper.
- Transfer the mixture to a baking dish and top with the shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
