Ingredients[edit | edit source]
- 1 medium cauliflower
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup melted butter
- 1/2 teaspoon baking powder
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by preheating your waffle iron.
- Cut the cauliflower into florets and steam until tender. Once cooked, allow it to cool.
- Once the cauliflower is cool, use a cheese cloth or a clean kitchen towel to squeeze out as much water as possible.
- In a food processor, combine the cauliflower, eggs, almond flour, melted butter, baking powder, salt, and pepper. Process until smooth.
- Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions.
- Serve the waffles warm with your favorite keto-friendly toppings.
