Creamy Low Carb Cauliflower Mushroom Risotto is a delicious keto friendly dish that is easy to prepare and packed with flavor. This recipe serves 4 and takes approximately 30 minutes to prepare.

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  2. Add the mushrooms to the skillet and cook until they are browned and tender.
  3. Add the riced cauliflower to the skillet and stir to combine with the onions and mushrooms.
  4. Pour in the chicken broth and heavy cream. Stir well and let the mixture simmer for about 10 minutes, or until the cauliflower is tender.
  5. Stir in the Parmesan cheese and season with salt and pepper. Continue to cook for another 2-3 minutes, or until the cheese is melted and the risotto is creamy.
  6. Garnish with fresh parsley before serving.
