Creamy Low Carb Cauliflower Mushroom Risotto[edit | edit source]
Creamy Low Carb Cauliflower Mushroom Risotto is a delicious keto friendly dish that is easy to prepare and packed with flavor. This recipe serves 4 and takes approximately 30 minutes to prepare.
Ingredients[edit | edit source]
- 1 large cauliflower, riced
- 2 cups of sliced mushrooms
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the mushrooms to the skillet and cook until they are browned and tender.
- Add the riced cauliflower to the skillet and stir to combine with the onions and mushrooms.
- Pour in the chicken broth and heavy cream. Stir well and let the mixture simmer for about 10 minutes, or until the cauliflower is tender.
- Stir in the Parmesan cheese and season with salt and pepper. Continue to cook for another 2-3 minutes, or until the cheese is melted and the risotto is creamy.
- Garnish with fresh parsley before serving.
