  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Slice the eggplant into thin strips and place them on a baking sheet.
  3. Drizzle the eggplant with olive oil and season with salt and pepper.
  4. Bake the eggplant in the preheated oven for about 15 minutes, or until it's tender and slightly browned.
  5. While the eggplant is baking, cook the bacon in a large skillet over medium heat until it's crispy. Remove the bacon from the skillet and set it aside.
  6. In the same skillet, add the minced garlic and cook it until it's fragrant.
  7. Add the heavy cream to the skillet and bring it to a simmer.
  8. Stir in the Parmesan cheese until it's melted and the sauce is creamy.
  9. Add the baked eggplant and crispy bacon to the skillet and stir to combine.
  10. Sprinkle the dish with chopped parsley before serving.
