A delicious and healthy keto friendly recipe, Eggplant Bacon Alfredo is a perfect dish for those who are on a ketogenic diet. This dish is packed with nutrients and is low in carbs, making it an ideal meal for keto dieters.
Ingredients[edit | edit source]
- 1 large eggplant
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of bacon
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chopped parsley
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Slice the eggplant into thin strips and place them on a baking sheet.
- Drizzle the eggplant with olive oil and season with salt and pepper.
- Bake the eggplant in the preheated oven for about 15 minutes, or until it's tender and slightly browned.
- While the eggplant is baking, cook the bacon in a large skillet over medium heat until it's crispy. Remove the bacon from the skillet and set it aside.
- In the same skillet, add the minced garlic and cook it until it's fragrant.
- Add the heavy cream to the skillet and bring it to a simmer.
- Stir in the Parmesan cheese until it's melted and the sauce is creamy.
- Add the baked eggplant and crispy bacon to the skillet and stir to combine.
- Sprinkle the dish with chopped parsley before serving.
