Garlic and Herb Cauliflower Mac and Cheese with Bacon is a delicious and healthy keto friendly dish. It is a great alternative to traditional mac and cheese, using cauliflower instead of pasta, and adding a flavorful twist with garlic, herbs, and bacon.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Toss the cauliflower florets in the olive oil, salt, and pepper, and spread them out on a baking sheet.
  3. Roast the cauliflower in the preheated oven for about 15 minutes, or until it is tender and slightly browned.
  4. While the cauliflower is roasting, heat the garlic and herbs in a large saucepan over medium heat until fragrant.
  5. Add the heavy cream to the saucepan and bring it to a simmer.
  6. Stir in the shredded cheddar cheese until it is melted and the sauce is smooth.
  7. Add the roasted cauliflower to the sauce and stir until it is well coated.
  8. Transfer the cauliflower and cheese sauce to a baking dish and top it with the crumbled bacon.
  9. Bake the dish in the oven for about 10 minutes, or until the cheese is bubbly and the bacon is crispy.
