A delicious and creamy Instant Pot Seafood Bisque that's perfect for those on a keto diet. This recipe is quick and easy to prepare, and it's packed with flavor and nutrients.
Ingredients[edit | edit source]
- 1 lb mixed seafood (shrimp, scallops, crab)
- 2 tbsp butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup white wine
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Turn on the Instant Pot and select the sauté function. Add the butter, onion, and garlic, and sauté until the onion is translucent.
- Add the seafood and sauté for another 2-3 minutes, until the seafood is just cooked through.
- Add the chicken broth, heavy cream, white wine, paprika, salt, and pepper. Stir well to combine.
- Close the lid and set the Instant Pot to the soup function. Cook for 10 minutes.
- Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
- Serve the bisque hot, garnished with fresh parsley.
