Jalapeno Cauliflower Rice Balls[edit | edit source]
Jalapeno Cauliflower Rice Balls are a delicious and healthy keto friendly snack. They are easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 1 large cauliflower, riced
- 1/2 cup jalapeno, finely chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 large eggs
- 1/2 cup almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Olive oil for frying
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the riced cauliflower, jalapeno, cheddar cheese, parmesan cheese, eggs, almond flour, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
- Form the mixture into small balls, about the size of a golf ball.
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
- Fry the cauliflower rice balls in the skillet until golden brown on all sides.
- Transfer the fried balls to a baking sheet and bake in the preheated oven for 10-15 minutes, or until cooked through.
- Serve hot with your favorite keto friendly dipping sauce.
