Keto Cheeseburger Muffins are a delicious and easy-to-make snack that is perfect for those following a keto diet. They are low in carbs and high in protein, making them a great choice for a keto-friendly meal.
Ingredients[edit | edit source]
- 1 lb ground beef
- 1/2 cup cheddar cheese, shredded
- 1/4 cup onion, finely chopped
- 1/4 cup pickle, finely chopped
- 1/2 cup almond flour
- 1/4 cup heavy cream
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions[edit | edit source]
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the excess fat.
- In a large bowl, combine the cooked beef, cheddar cheese, onion, and pickle.
- In another bowl, whisk together the almond flour, heavy cream, eggs, salt, and pepper.
- Gradually add the wet ingredients to the beef mixture, stirring until well combined.
- Spoon the mixture into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before removing them. Serve warm.
